Award-Winning Chef Gavin Kaysen Hosts an Exclusive White Truffle and Barolo Dinner at The Merchant Room at Naples Beach Club, A Four Seasons Resort
On Sunday, December 28, 2025, Chef Gavin Kaysen will host an incredible evening celebrating Piedmont, Italy’s most prized culinary treasures – white truffle and Barolo wine - in The Merchant Room at Naples Beach Club, A Four Seasons Resort. This unforgettable gastronomic experience will feature a lavish four-course menu showcasing the exquisite white Alba truffle, paired with exceptional Barolo wines. Guests will be guided through this journey by Chef Kaysen and his Head Sommelier Zach Byers, who will share insights into the artistry behind each pairing.
Famous the world over, the coveted white Alba truffle is celebrated for its bold, complex flavour — as are the Barolo wines crafted from grapes grown in the same storied terroir. The evening’s menu will feature selections from some of Piedmont’s most esteemed vineyards alongside hidden gems, each paired seamlessly with Chef Gavin Kaysen’s truffle-infused creations. Adding to the evening’s exclusivity, truffles will be shaved tableside as Chef Gavin Kaysen personally guides guests throughout the experience, while Zach brings his extensive wine knowledge to the evening’s program, enriching the tasting experience his with expertise and discerning palate. - White Truffle and Oeuf - Soft scrambled egg, aged Beemster gouda foam, crispy potato

First Course
- White Truffle and Lobster - Gently poached lobster tail, smoked dashi, celeriac, parsnip

Second Course
- White Truffle and Cappellacci pasta - Fontina filled pasta, wild mushrooms, fines herbs
- Pairing: 2021 Luigi Giordano "Cavanna" Barbaresco
Third Course
- White Truffle and Creekstone Prime Tenderloin - Sauce vin jaune, broccolini, white truffle layered pommes anna
- Pairing: 2006 Oddero Barolo Vignarionda Riserva
Dessert

The dinner will take place on Sunday, December 28, 2025, with one seating at 6:0 0pm. The cost is USD 920 per person, inclusive of four-course tasting menu and wine pairings, plus taxes and gratuity.
