Born in the Toulouse region, David Piquet grew up in a home where the table held a central place. Sunday meals, the smell of his grandmother's cooking, and conversations with the neighbouring winemakers shaped his sensitivity to fine produce from an early age. He naturally turned to the restaurant world, where he discovered the craft of the dining room. Captivated by the art of wine, he came to understand that excellence in service depends on a deep knowledge of that world; through direct contact with winemakers, conversations that fed his curiosity and refined his palate, he grasped that wine is not merely a drink, but a vehicle of transmission weaving together history, passion, terroir and craftsmanship. A true turning point: he would become a sommelier.
At 21, eager to perfect his English and gain a better understanding of New World wines, he left France for Lancashire, near Manchester, joining the team at Northcote Manor. In that international environment, he learned to adapt across cultures and sharpen his tasting technique. Back in France, he returned to his native Southwest and joined the brigade of the three-Michelin-star Les Prés d'Eugénie as Assistant Chef Sommelier from 2017 to 2018, then that of Christophe Bacquié's restaurant the following year. Talented and equally at ease in the dining room and among the vines, he quickly caught the attention of chef Dimitri Doisneau, who was seeking a third Michelin star for La Villa Madie and wanted a young team around him for the project of a lifetime. David joined as Chef Sommelier, and together they elevated the restaurant to the highest distinction in 2022. The following year, he was named Sommelier of the Year, PACA by the Gault&Millau guide, then awarded Wine List of the Year 2024 by the Lebey guide.
In 2026, David Piquet joined Four Seasons Hotel George V, Paris as Director of Sommellerie for Le Cinq, succeeding the iconic Éric Beaumard. He aims to bring an immersive approach to sommellerie, one where transmission goes beyond tasting alone, carrying forward the wine list built by his predecessor. "What drives me every day is the cycle between learning and passing on. Every encounter, every tasting, every exchange with winemakers and our guests is an opportunity to nourish that passion." Alongside chef Christian Le Squer, whose cuisine he intends to elevate through wine, David Piquet now writes his own chapter in the history of a house that stands among the world's great references in sommellerie.
