Originally from Boulogne-sur-Mer, Thibault Mequignon grew up in a family where gastronomy and a passion for quality ingredients played a central role. As a teenager, he is curious about the world of hospitality and decides to pursue studies at the Lycée Hôtelier du Touquet. After earning a BTS degree in Hospitality Management, he turned to mixology following an experience with chef Alexandre Gauthier, where he discovered the power of flavor pairings and the precision of haute cuisine. While helping a friend who owned a bar, he realized his true place was behind the bar rather than in the kitchen, as it allowed him to combine his love for creativity with direct guest interaction.
He quickly specialized in the bar world, refining his first mixology techniques in Bordeaux before taking his career to an international level, starting in London at the renowned Experimental Club. He then joined the team at Mace in New York, ranked among the “World’s 50 Best Bars,” where he trained under celebrated mixologist Nico de Soto. With him, he honed his techniques and learned the art of balancing emotion, skill, and generosity. This pivotal collaboration continued from 2016 to 2020 with the opening of Danico in Paris, an iconic destination in the Parisian cocktail scene, also ranked among the “World’s 50 Best Bars.”
A true globetrotter, eager to explore new cultures and embrace challenges of all kinds, Thibault moved to Dubai in 2020 to take over the Gilt Bar on the 27th floor of the iconic Burj Al Arab. There, he oversaw the bar’s reopening after a ten-month closure and brought new energy to the team while developing the offering. In this prestigious setting, he skillfully balanced elegance and refinement with a creative and innovative approach. Building on this momentum, he then joined the opening team of One&Only One Za’abeel as Beverage Manager, where he led operations across eleven bars, bringing a consistent, forward-thinking, and excellence-driven vision.
In March 2025, Thibault joined Four Seasons Hotel George V, Paris as Bar Manager. Armed with his expert knowledge of mixology and experience with a discerning international clientele, he aims to blend classic elegance with modernity and creative boldness. His philosophy is rooted in “simplexity”: cocktails with a minimalist appearance but subtle aromatic complexity, designed as true sensory experiences.
