Celebrate the season with Steve & Cookie’s collaboration dinner, lunch menu expansion and an exclusive spirit series dinner featuring Suntory
As the weather warms up, Vernick Fish at Four Seasons Hotel Philadelphia, led by Greg Vernick, a 2025 James Beard semi-finalist nominee for Outstanding Chef, is embracing the season with fresh new offerings to celebrate the start of spring. From dishes featuring the vibrant flavours of the season to specialty partner dinners, Vernick Fish is the perfect spot in Philadelphia for a business lunch, post-work drinks or dinner date.
A Taste of the Shore: Steve & Cookie’s Collaboration Dinner
On Wednesday, April 30, 2025, Vernick Fish will host the beloved Margate, New Jersey restaurant and team, Steve & Cookie’s, for the third annual collaboration dinner. Alongside Vernick Fish Chefs Greg Vernick and Dave Paterniti, the five-course menu will feature both seasonal Vernick Fish items and classic Steve & Cookie’s dishes presented by owner Cookie Till and her Executive Chef Kevin Kelly. Cocktails from the restaurants’ bar menus and an optional wine pairing will be available to complement the courses. The sounds of live piano music will create the perfect ambiance for a beautiful and unforgettable evening, bringing the atmosphere of Steve & Cookie’s to Philadelphia.
Throughout the evening, guests will indulge in a curated selection of seasonal dishes, including a vibrant Reed’s Farm Salad with focaccia croutons and Misty Meadow’s Goat Gouda, crispy fried shrimp with lemon, cherry peppers, and fennel slaw, and Warner’s potato salad. The menu will also feature East Coast oysters topped with Osetra caviar and horseradish crème fraiche, as well as red snapper ceviche with rocoto pepper, puffed corn, and black mint. As the meal progresses, a house-made ricotta cavatelli will be served with a savoury tuna sausage ragù and crispy pangrattato. Guests can also enjoy a selection of craft cocktails alongside non-alcoholic offerings such as the Bees Knees, a refreshing blend of Reed’s Farm botanical hydrosol, lavender-infused honey, chamomile, and lemon juice.

A portion of the dinner will benefit A Meaningful Purpose at Reed’s Farm, Cookie’s non-profit that addresses the needs of food insecurity, soil regeneration, and inclusiveness for the communities that neighbour her restaurant.

Lunch Cravings by Greg Vernick
Enjoy a delicious weekday lunch at Vernick Fish, served Monday to Friday from 11:30 am to 2:00 pm. Guests can expect a selection of fresh, local oysters and a variety of crudos, including vibrant King Salmon with horseradish crème fraiche and the refreshing Yellowtail with blood orange ponzu. For something heartier, the crispy chicken katsu is a new addition, featuring a flavourful gochujang glaze paired with a tangy Brussels sprouts salad and creamy Korean potato salad. Whether looking for something light or indulgent, there’s a dish to satisfy every craving.
Social Hour Heats Up for Spring
Unwind at Vernick Fish’s Social Hour, offered daily from 4:30 to 6:00 pm in the bar and lounge. Sip on expertly crafted cocktails from the tequila-forward La Rosita to the classic Gold Rush, and explore a curated selection of wines by the glass, including a crisp Cortese from Piedmont or a refreshing Txakoli Rosado from Spain. Each week, a featured dish complements the experience, offering a fresh and flavourful pairing.
Spirit Series Dinner: Awakening Suntory Senses
Following the success of the last Spirit Series dinner, Vernick Fish will present a limited-seat immersive experience in collaboration with the Suntory Global Spirits team. Taking place on June 5, 2025 and hosted in the restaurant’s private dining room, this one-of-a-kind event will take guests on a sensory journey through the four seasons, featuring the freshest seafood prepared by Chefs Greg Vernick and Dave Paterniti inspired by traditional Japanese flavours. House of Suntory, already featured throughout Four Seasons Hotel Philadelphia, will offer a selection of renowned spirits including the herbal Hakushu Whiskey and subtly smooth Hibiki Japanese Whisky. In collaboration with Vernick Fish’s Lead Bartender Jon Bamonte, and Four Seasons Beverage Director Dawn Trabing, the House of Suntory team will curate a bespoke cocktail pairing experience for each course, elevating this unforgettable dining experience. Tickets will become available on OpenTable beginning in April.
