Vernick Fish at Four Seasons Hotel Philadelphia at Comcast Center invites guests to experience a reimagined timeless pairing. On Thursday, November 6, 2025, James Beard Award-winning Chef Greg Vernick and Chef de Cuisine David Paterniti will present a one-night only Surf & Turf Dinner, celebrating the American classic refined for one night only.
“Surf & Turf is a classic dining experience that feels nostalgic but timeless, and we put together a menu that feels light, bright and of the season,” says Chef Vernick.
This special five-course family style menu showcases the team’s inventive approach to contemporary coastal cooking. The experience begins with Yellowfin Tuna Tataki paired with foie gras, pear and ginger chutney and tarragon, followed by American Wagyu Beef Tartare enhanced with bone marrow, Osetra caviar and brioche. The third course features an Olive Oil Poached Halibut complemented by pork cheek dashi and black trumpet mushrooms. The final savoury course highlights American Wagyu Beef Tenderloin accompanied by Royal Imperial, potato rosti, and veal jus. The Yuzu Meringue Pie offers a bright and elegant finale for the evening.
Reservations for this one-night dinner can be made here. Seating is available in the dining room, at the chef’s counter and at the bar from 5:00 to 10:00 pm. Guests at the bar will also have the option of an a la carte menu.
