The nine-course tasting menu of the MIRU rooftop restaurant at Four Seasons Hotel Prague has been created by the Hotel's Executive Chef Marco Veneruso in collaboration with Japanese Chef Mitsuru Tsukada. The creative gastronomic duo was joined by bar expert George Jiří Němec, who created a trio of original cocktails for the evening degustation on the terrace with one of the best views in Prague overlooking the Prague Castle and Charles Bridge.

"All three cocktails are prepared with great respect for the flavours and their combinations with the main dishes. They are designed to adhere to global mixology standards while acknowledging the beauty of Japanese culture as well as the unique location and concept of MIRU restaurant," says George Jiří Němec about the cocktails.

  • Ki No Bi - The main ingredient is the eponymous Japanese gin; its name translates to "beauty of all seasons." The light and fresh combination of gin and fresh cucumber and dill juice makes a great companion to salmon with mustard miso prepared in tataki style.
  • Yuzu bīru, or "yuzu beer" - Made of yuzu sake, yuzu sweet tea, rice vinegar and yuzu tonic, the cocktail is served from a chilled can, reminding guests of the most popular tourist activity in Prague - drinking beer while enjoying the best view. Yuzu bīru is paired with black cod as it highlights the flavour of the fish with its fresh and spicy notes.
  • Miru - The last cocktail is served in ceramic cups made by a local artist with the second of the dessert courses, caramelised cake with matcha sorbet. Miru is the Japanese word for Czech "look around," which embodies the experience of dining on the rooftop terrace overlooking the Prague Castle and Charles Bridge. Guests can enjoy the city skyline with the sweet combination of choya plum, gin, white cocoa and matcha, take a look at themselves or take a peek into their own experience.

MIRU is open until the end of September. Degustation dinner starts at 6:00 pm and is served from Tuesday to Saturday. Limited tables are available; reservation via telephone at + 420 221 426 880 is required. Price of the degustation menu is CZK 5000; wine and cocktail pairing CZK 2000.
