Four Seasons Hotel Prague Introduces New Pastry Chef Giovanni Marco Carandino
Chef Giovanni Marco Carandino, a native from Palermo, Sicily, brings over a decade of experience and an undeniable passion for sweet Italian flavours to Four Seasons Hotel Prague.
One of his first confectionery projects at Four Seasons Hotel Prague is a special “Love is Sweet” Valentine’s Day Afternoon Tea with a selection of desserts showcasing his creativity and skills he mastered at the famous Italian School Boscolo Etoile Academy. A lover of all things with chocolate, Chef Gianmarco enjoys making pralines along with creating artistic show pieces.
“I love working with chocolate because the only limit you have is your imagination. When I started my career in pastry, my previous pastry chef was an incredibly good chocolate sculpture maker, so he passed his passion to me,” says Gianmarco about his creativity and love for chocolate, which came alive in this year’s Afternoon Tea. From strawberries and white chocolate red choux, to dark chocolate and red currant cake to dulcey tartlet with passion fruit and caramel, Chef Gianmarco’s menu will be a sweet feast for all senses.
In addition to the Afternoon Tea, Chef Gianmarco has already re-invented the a la carte menu at CottoCrudo restaurant with five new desserts including a modern twist on traditional tiramisu, a creamy carrot cake or beton apple tartlet with extra virgin olive oil ice cream.
Prior to moving to Prague, he worked at Four Seasons Hotel Florence for eight years, eventually managing the pastry team at the Michelin-distinguished Il Palagio restaurant. Although Gianmarco, as he is called by the team, initially started in savoury kitchens, he was quick to realize that life is “sweeter” in the world of pastries.
