Created specifically for the summer season, the menu offers a refreshing journey through sweet, sour, aromatic, floral, herbaceous, and umami flavor profiles. Drawing inspiration from the diverse regions of France while embracing local tastes, each mocktail carries a subtle French twist designed to appeal to a wide range of guests.

Beef Tartare is considered one of the great classics of French gastronomy. Celebrated for its balance of richness, seasoning, acidity, and texture, it has become a benchmark of culinary precision and remains one of the signature dishes at Café Boulud Riyadh.

The challenge was intriguing: how could we translate the flavors and emotions of Beef Tartare into a non-alcoholic cocktail?

The answer became Boulevardier Tartar.

  • Inspired by the structure of the classic Boulevardier cocktail, this mocktail begins with Glen 0.0 fat-washed with Wagyu beef. This technique infuses the drink with remarkable depth, richness, and savory umami characteristics that mirror the essence of the tartare itself.
  • Vermouth Rosso 0.0 follows, bringing notes of dried fruits, caramel, vanilla, warm spices, and gentle herbal sweetness. Italian orange is added to recreate the bittersweet character associated with Campari, delivering flavors of bitter orange peel, herbs, and subtle botanical complexity.
  • A homemade Maraschino Cherry Acid introduces a delicate balance of sweetness and acidity, bringing brightness and a fruity lift to the drink.
  • Drops of salt and pepper solution act as seasoning, much as they do in the preparation of Beef Tartare, helping to unite and enhance every flavor component.
  • Caper brine adds a savory saline dimension, contributing brightness, depth, and subtle pickled notes that reinforce the drink's gastronomic identity.
  • To finish, the mocktail is topped with a light Dijon Mustard Air Foam. Originating from Burgundy, Dijon mustard has been a symbol of French culinary craftsmanship since the Middle Ages.
