Terra at Four Seasons Resort Rancho Encantado Santa Fe offers an immersive dining experience that connects guests to the spirit of Santa Fe through cuisine, setting and hospitality. This spring, Terra hosts a vibrant new dinner menu from Executive Chef Gregory Joseph, drawing inspiration from the colours, textures and seasonal bounty of the property’s home in northern New Mexico.

Rooted in a deep respect for regional ingredients and elevated by global technique, the new menu reflects the transition into spring with dishes that are refined and approachable. Chef Joseph channels the high-desert landscape surrounding the resort into a culinary experience that reflects Santa Fe’s distinct sense of place.

“Santa Fe has beautiful views of the Sangre de Cristo Mountains, vibrant sunsets and a unique medley of cultural influences,” says Chef Joseph. “I wanted to translate that inspiration onto the plate. This new menu captures the vibrancy of the season with fresh dishes that still honour the bold, earthy character of New Mexico cuisine.

The new menu opens with a dynamic selection of starters, including Roasted Poblano Leek Bisque with crispy potatoes and chive oil, and Heirloom Masa Cauliflower Bites with pistachio chili paste. Highlights continue with Coriander and Sesame Tuna featuring citrus ponzu and avocado puree, alongside Green Chile Poached Shrimp Cocktail with tamarind and lemon. Salads showcase seasonal produce with dishes such as the Napa Cabbage Salad with soy vinaigrette and the Lacinato Kale Caesar with red and yellow tomatoes and parmesan, drawing inspiration from the surrounding high-desert landscape.

Entrées reflect regional heritage with standouts including the Seared Pacific Salmon with black beluga lentils and chermoula pipián, Grilled Mediterranean Branzino with romesco and crispy vermicelli, and Juniper Braised Lamb Shank served with herb triple cream polenta and heirloom carrots. For a distinctly local touch, the Roasted Poblano entrée—featuring calabacitas, piñon, and avocado—offers a plant-forward option that also can be prepared vegan.

Classic comfort dishes are elevated with signature Terra flair, including Pepita Crumble Seared Scallops and Prime Flatiron Steak Frites with green chile jam. Complementing the menu are thoughtfully crafted sides such as elote with aioli and cotija, green chile mac and cheese, and roasted garlic fingerling potatoes.

In addition to the à la carte offerings, Terra continues its popular Seven Nights of Terra weekly specials, inviting guests to return throughout the week for rotating features such as Bison Tomahawk, Seafood Paella and Fried Chicken Sunday.

End the evening on a sweet note with a selection of signature desserts from Pastry Chef Michael Betancourt. Choices include Churros with warm chocolate sauce and dulce de leche Anglaise and Gianduja and Orange Blossom, with Gianduja mousse, orange blossom creméux, almond dacquoise and hazelnut ice cream. Rounding out the menu is the Earl Grey Napoleon with caramelized puff pastry, Earl Grey diplomate and apricot.
