A native of Colombia and raised in Sweden, Executive Pastry Chef Daniel Windelhed draws on a rich tapestry of cultural influences to shape his distinctive approach to pastry.
Chef Daniel’s pastry career encompasses a wide range of culinary settings, from artisanal bakeries and Michelin-starred fine dining establishments to luxury resorts and internationally acclaimed restaurants. In 2023, he joined Four Seasons as Head Pastry Chef at Four Seasons Resort Maldives at Kuda Huraa, and after a couple of years in the archipelagic state in South Asia, he moves from one island to the next, making his debut in Singapore.
His creations are guided by a deep appreciation for nature, design, and the everyday moments that celebrate artistry. “Vanilla and butter are my essentials in baking, as you can do so much with these seemingly humble ingredients to enhance any dessert,” he says. His signature? A classic lemon tart—one he enjoys crafting as much as he does tasting.
Now as Executive Pastry Chef at Four Seasons Hotel Singapore, Chef Daniel is driven by a vision to reimagine the pastry experience not by following trends, but by setting them. He approaches each creation as a blank canvas, pushing the boundaries of flavour, form, and technique to surprise and captivate. With a discerning eye for detail and a deep passion for artistic expression, he continues to refine his craft in ways that resonate with contemporary tastes. His creativity is complemented by a dedication to mentorship, having previously coached young pastry chefs for international competitions. Today, he channels his vision into curating singular, sensorial moments for guests through desserts that are as thoughtfully composed as they are unforgettable.
Outside the kitchen, Chef Daniel enjoys exploring the outdoors with long walks, listening to music, and discovering great dining spots with friends.
