Under the masterful culinary interpretation of Executive Chinese Chef Charles Zhang, the Yangcheng Lake hairy crabs are prepared using various techniques. The steamed crabs retain the natural freshness, allowing diners to savour the pure and fresh taste of the crabs. The drunken crabs marinated in Fuzhen yellow rice wine from Shaoxing, Zhejiang, offer a unique blend of rich wine aroma and crab flavour, creating a sweet and mellow taste that embodies the charm of classic Jiangnan flavour.

The menu also features signature dishes such as Tuhuangyou (crab roe and crab cream) over rice and crab roe soup. Tuhuangyou is a traditional and luxurious delicacy in Jiangnan cuisine. Paired with light and delicious chicken soup to achieve a perfect balance of flavours, it showcases the chef's artistry in balancing the creamy and fresh tastes.

The Autumn Crab Rhyme afternoon tea combines traditional crab culture with modern afternoon tea concept. Crab roe pastries, shaped vividly, feature a crispy crust and smooth crab roe filling. The salted lemon and osmanthus flavoured rice cake offers a perfect blend of sweet and salty, adding a unique touch to the traditional snack.
