Braidwood Tavern at Four Seasons Resort and Residences Whistler is making waves this summer as it extends a delicious invitation to lovers of seafood, with the debut of its "Tide to Table" menu crafted by Executive Chef Sajish Kumar Das. This menu is a vibrant tribute to British Columbia’s coastal treasures, combining local staples with ocean-inspired delights to create a dining experience that is as colourful as it is flavourful.

Guests will be swept away by this oceanic inspired journey that celebrates the best of Canada’s coastal bounty. British Columbia’s rich fishing grounds, famous salmon rivers, and pristine ocean farms have long united those who love everything aquatic, and Braidwood Tavern’s new menu this essence is hook, line and sinkered, deliciously.

To begin, a mouth-watering selection of oysters is on offer (Kusshi, Royal Miyagi, Fanny Bay), followed with a delicate composition of starters. Fritto Miso features medley of local shrimps, squid, soft shell crabs, perfectly paired with a confit garlic aioli. A Prawn Guazzetto bursts with flavours of the Mediterranean with Brew Creek Farm tomatoes, capers, Provençal herbs, and cured lemon. For a hearty start, the Cioppino-style Seafood Soup combines local seafood with a rich sourdough base. The Burrata Salad has landed a permanent spot on the menu as a fan favourite, promising locally produced burrata, tomato, poached pear, microgreens, and aged balsamic, offering a refreshing interlude.

Raw enthusiasts will celebrate the Ora King Salmon, fresh and full of flavour, and the visually stunning Hamachi Carpaccio. The Spot Prawn Tartare highlights local spot prawns paired with Transmontanus caviar, mountain honey from Resort’s very own bees, chives dressing, and wild herbs.

Then, dive in with the Scallop Seamare, where hand-cut U10 scallops meet shaved truffle, Jerusalem artichoke puree meets smoked oyster, and fennel, paving the way for the extraordinary main courses. The Catch of the Day showcases a mosaic of rapturous flavours, with Japanese clam and caviar velouté, turnip tops, olives, and razor clam foam. Immerse in an epicurean feast with the Seared Salmon, or explore the Black Cod, as a marriage of textures and tastes designed to wow and wonder.  The Seafood Linguine combines assorted shellfish with squid ink linguine, chili flakes, and Riesling. For those seeking a land-and-sea experience, the New York Striploin features a Canada Prime 6 ounce striploin with potato puree, baby carrots, and a 5 ounce poached lobster. The Potato and Leek Ravioli offers a dish so delicious it may convert the carnivores, with creamy mushroom puree, pickled chanterelle, morels, and truffle essence.

End the adventure on a sweet note with the Classic Crème Caramel, served alongside fresh berries and vanilla tuile, or the Apple Date Sticky Pudding with salted caramel sauce and apple-vanilla ice cream. The Honey-Lemon Mousse features a refreshing raspberry cremeux, shortbread, honey gel, lemon curd, and honeycomb tuile.
