Four Seasons Hotel Bangkok at Chao Phraya River welcomes Nicolas Lambert, a globally celebrated Pastry Chef, for an exclusive limited-time pop-up and Afternoon Tea collaboration. Renowned for his technique with seasonal ingredients and inventive dessert creations, Lambert currently serves as Senior Executive Pastry Chef at Four Seasons Resort Dubai at Jumeirah Beach, having previously refined his craft at Four Seasons properties in Hong Kong and St. Petersburg.

From 12 September to 10 December 2025, Cafe Madeline will be transformed into a pop-up showcasing Chef Nicolas Lambert’s signature retail pastries and gourmet confections, while The Lounge presents a limited-time Afternoon Tea by Chef Nicolas Lambert, crafted in collaboration with Executive Pastry Chef Andrea Bonaffini, celebrating playful creativity, seasonal ingredients, and visually stunning desserts.

“Collaborating with Andrea allows us to blend our styles and creativity. Together, we’ve designed an Afternoon Tea that surprises and delights with every bite,” says Chef Lambert.

“Working with Nicolas has been inspiring,” adds Chef Bonaffini. “Our collaboration brings together seasonal ingredients, artistic design, and playful flavours to create an Afternoon Tea that guests will remember.”

The Afternoon Tea unfolds as a refined culinary journey: Hotate Scallop Ceviche with orange and yuzu, Heirloom Tomato with mint, Bronte pistachio, and stracciatella, Blue Crab Salad with mango, grilled avocado, and Osietra caviar, Smoked Duck Foie Gras with raspberry and beetroot compote, Japanese Flying Squid with cucunci and smoked potato foam, Balik of Salmon with sunchoke and pickled salmon roe, and a Black Truffle Croque Monsieur.

The sweet chapter features Chef Lambert’s artistic signatures, including Acacia Honey and Thai Mango Bee, Tahitian Vanilla Caramel and Pecan Nut Choux, Pistachio and Strawberry Tart, and a Three Chocolate Cake. Guests will also enjoy a surprise of Chocolate, Caramelized Cocoa Nibs, and Tahitian Vanilla Brioche, and finish with Mango Passion and Hokkaido Milk Soft Serve.

Chef Lambert, celebrated as Asia’s Best Pastry Chef 2018, is renowned for his iconic The Bee series and his philosophy of highlighting core ingredients while delivering visually stunning and flavourful creations.

The Cafe Madeline pop-up will offer takeaway and dine-in options, featuring a curated selection of Lambert’s most popular pastries and confections, crafted with French technique and seasonal inspiration.

The Chef Nicolas Lambert Afternoon Tea is available daily from 2:00 pm to 5:00 pm at The Lounge, priced at THB 1,800++ per person. Cafe Madeline’s pop-up retail collection is available throughout the day during the event period, daily from 7:00 am to 7:00 pm.
