Palmier by Guillaume Galliot introduces a refreshed culinary experience this October, unveiling a new menu that continues to capture the spirit of French brasserie dining through refined craftsmanship and heartfelt simplicity. Launching on October 28, 2025, the new menu brings together comforting classics, seasonal produce, and Chef Guillaume’s signature creativity, all served in the relaxed setting of Four Seasons Hotel Bangkok at Chao Phraya River.
Returning to Bangkok for the launch, Chef Guillaume Galliot shares his excitement for this new chapter at Palmier. “Palmier has always been about creating a bridge between my French roots and the vibrant energy of Bangkok,” says Chef Guillaume. “With this new menu I wanted to revisit some of the most beloved dishes of French brasserie cuisine, those that celebrate warmth, generosity, and flavour while giving them a fresh perspective that feels authentic yet elevated.”
Guests can indulge in a thoughtfully curated selection of new and classic brasserie favourites, celebrating the relaxed charm of casual French dining. Highlights include Duck à l’Orange with potatoes and fennel; Boeuf Bourguignon in a red wine sauce with buttery mashed potatoes; Wagyu Beef and Foie Gras Burger; Whole Roasted Calamari with champagne sauce; Trofie Pasta with crab meat in a bisque sauce; Pan-Fried Foie Gras with a port wine sauce; and Pan-Seared Scallops with carrot and a bisque sauce. The refreshing Seafood Towers invite convivial family-style sharing, while timeless dishes such as Poulet Rôti with morel and a creamy sauce, and Sole Meunière Classique with pomme cocotte remain beloved staples. Vegetarian options include a Zucchini Blossom stuffed with ratatouille and a parmesan coulis, highlighting Palmier’s commitment to creativity and inclusivity. Each dish reflects the restaurant’s dedication to sourcing the freshest local and sustainable ingredients, while preserving the essence of authentic French brasserie cooking.

A Seasonal Addition: L’Ardoise by Chef Guillaume Galliot
Inspired by the French brasserie tradition of a menu sur l’ardoise, the daily blackboard menu that reflects the chef’s mood and the market’s freshest produce, Chef Guillaume introduces L’Ardoise, a new concept at Palmier.
Changing regularly according to ingredient availability and inspiration, L’Ardoise showcases the spontaneity and creativity of true brasserie cooking. This chef’s selection offers two- or three-course options, priced at THB 1,500++ and THB 1,850++, inviting guests to discover an ever-evolving expression of Palmier’s seasonal flavours.
Set against the serene backdrop of the Chao Phraya River, Palmier by Guillaume Galliot remains a destination for relaxed sophistication, where lively brasserie charm meets fine dining artistry. Chef Guillaume will be in Bangkok on November 7 and 8, 2025, to personally present the new menu to guests during the official launch week, marking another exciting milestone in Palmier’s evolution.
Palmier by Guillaume Galliot is open Tuesday to Sunday for lunch from 11:30 am to 2:30 pm and dinner from 6:00 pm to 10:30 pm.
