Four Seasons Hotel Bangkok Presents Maestri della Tavola: From Torino to Bangkok, a Celebration of Contemporary Italian Pizza at Riva del Fiume
This September, Riva del Fiume Ristorante at Four Seasons Hotel Bangkok at Chao Phraya River presents Maestri della Tavola: From Torino to Bangkok, an exclusive culinary collaboration featuring Massimiliano Prete, founder of the acclaimed Sestogusto Torino. Recognised among the world's leading contemporary pizza artisans, Chef Prete is celebrated for his innovative approach to dough, fermentation, and ingredient sourcing, bringing a distinctive perspective on Italian cuisine to Bangkok from September 18-30, 2026.
Hosted by Executive Chef Andrea Accordi, the collaboration reflects a shared commitment to showcasing the richness and diversity of Italy's culinary heritage through thoughtful craftsmanship and exceptional ingredients. From the culinary traditions of Piedmont to the riverside setting of Riva del Fiume, the experience invites guests to discover a menu shaped by regional influences, artisanal techniques, and a deep respect for flavour.
“At Riva del Fiume, we are passionate about sharing authentic Italian cuisine and the stories behind it with our guests," says Chef Accordi. "Massimiliano's approach is deeply rooted in tradition, yet constantly evolving through research and creativity. We are delighted to welcome him to Bangkok and introduce guests to a perspective on pizza that is both refined and deeply personal.”
On September 18 and 19, Chef Prete will personally join Chef Accordi and the Riva del Fiume team for lunch and dinner services, offering guests a rare opportunity to experience his creations firsthand. Following his visit, the exclusive menu will remain available through September 30.
Created exclusively for Maestri della Tavola: From Torino to Bangkok, the menu begins with SopraSotto, a signature pizza developed by Chefs Accordi and Prete. Featuring culatello fiocco, onion jam, Pecorino Fondatore, girolle mushrooms, Senise pepper, and 'nduja, the creation embodies the spirit of the collaboration while highlighting Chef Prete's celebrated approach to naturally fermented dough.
The menu continues with a collection of pizzas inspired by regions across Italy. Highlights include La Chorizo e Acciughe, combining Vesuvian cherry tomatoes, Cantabrian anchovies, and Sicilian oregano; La Trota with smoked trout, potato, and chive pesto; Zucchine alla Scapece, a contemporary interpretation of a Southern Italian favourite; and La Bufala, with Vesuvian cherry tomatoes, buffalo mozzarella, and Datterini tomatoes.
Contemporary creations such as La MarinAria, with fresh tomato passata, Taggiasca olives, and garlic; Il Gambero Rosso with Sicilian red shrimp and stracciatella; Vitello Tonnato, inspired by the beloved Piedmontese classic; and Sant'Ilario with burrata, aged prosciutto crudo, and fresh summer black truffle further showcase Chef Prete's distinctive culinary style.
Complementing the experience is a collection of cocktails inspired by Italy's vibrant culinary culture. Guests may discover Looks Like a Tiramisu, inspired by one of Italy's most beloved desserts; Italian Sangria, a refreshing expression of Italy's aperitivo tradition; Whiskey? No, Grappa!, showcasing Grappa Poli “Elegante” alongside bergamot and lime; and Essence of Tomato, a martini-style cocktail that highlights the fresh character of Italian tomato water.
“For me, pizza is a living expression of craftsmanship,” says Chef Prete. “Every dough, every ingredient, and every fermentation tells a story. I am honoured to share the philosophy of Sestogusto with guests in Bangkok alongside Chef Andrea Accordi and the team at Four Seasons Hotel Bangkok.”
