Through sakura season, the Neapolitan Pizzas at PIGNETO are available for takeaway – another excellent accompaniment for a blossom-viewing excursion. These authentic kiln-baked pizzas are crafted with a unique recipe by Alessandro de Leo, the Specialty Pizza Chef from Naples.

Spring Afternoon Tea

Michele Abbatemarco, the Pastry Chef at Michelin-starred est, celebrates the arrival of spring with a special Afternoon Tea, blending French and Japanese influences. The season’s refreshing spirit shines through the dainty sweets selection, dressed in vibrant pastels.

Transcending the traditional boundaries of afternoon tea, Pastry Chef Michele unveils creations such as the Kumquat marmalade, chamomile crème diploma,t which blooms with all the finesse of a Parisian patisserie, and the Mousse mules, blackcurrant confiture, a Japanese reimagining of the classic Easter egg – complete with sakura petals dancing in the spring breeze.

On the savoury side, guests can savour refined bites such as the White asparagus, chicken and mushroom vol-au-vent, considered a true test of a French chef’s skill, and the ”Jambon Persille” Yellow Mustard with Soymilk Cream, Gribiche Sauce and Bread Sable, a beloved Easter dish from Burgundy with a touch of Japanese elegance. Rounding out the menu are butterfly-shaped palmiers and classic scones.

The Someiyoshino cocktail at VIRTÙ this spring welcomes guests to a Hanami sipping journey in the sky. Served against breathtaking Tokyo views, the drink glows with cherry blossom liqueur and a hint of bright citrus, overlaid on a base of Japanese rice shochu and sake for an incredible depth of flavour.

Made with techniques passed down through centuries, Wagashi sweets are typically designed to reflect the season. This year’s confections take inspiration from springtime flowers, specifically pink peonies and yellow daffodils – both of which can be found in the Imperial Palace Gardens.
