Chef Russell Rummer’s inventive menu seamlessly blends island ingredients with the bold, vibrant flavours of Italy, offering dishes such as Dragon Fruit Cured Kona Kampachi from Blue Ocean Mariculture and Kauai Prawn Caramelle. The evening will be enhanced by a curated selection of wines, beginning with Champagne Laurent-Perrier and featuring Pio Cesare Barolo, which pairs exquisitely with Dry Aged Duck Three Ways.
