As part of the global Four Seasons 101 Days of Summer campaign, the resort introduces Destination Flavours, a seasonal culinary experience inspired by the ingredients that define Koh Samui and Thailand’s tropical south. From ripe mango, fresh coconut, and pomelo to aromatic botanicals, each creation reflects the island’s landscape, culinary traditions, and relaxed spirit of summer.

“At Four Seasons Resort Koh Samui, we always look for ways to connect guests more deeply with the destination,” says Jasjit Assi, General Manager. “Through these summer creations, we wanted to capture the flavours and aromas that naturally belong to the island at this time of year while offering something refreshing, immersive, and rooted in Thai culture.”

Summer Through the Flavours of Thailand

At the Michelin Guide recommended KOH Thai Kitchen, Executive Pastry Chef Fabien Casalino presents The Summer Thai Gelato Atelier, a refined collection of handcrafted gelato creations inspired by some of Thailand’s most beloved desserts.

Designed for warm, unhurried moments overlooking the sea, the experience invites guests to discover a trio of flavours that reinterpret familiar Thai sweets through a contemporary, summer-ready lens.

Mango Sticky Ice pairs coconut sticky rice ice cream with fresh mango, salted coconut cream, and crispy mung beans, bringing brightness and texture to one of Thailand’s most iconic desserts. Tub Tim Krob combines coconut sorbet with red rubies, pandan, young coconut, jackfruit, and coconut cream, capturing the fragrant and refreshing character of traditional Thai dessert culture. Banana brings warmth and comfort through Thai vanilla ice cream, caramelised banana, coconut sugar caramel, and roasted sesame.

Throughout the collection, coconut appears as a unifying ingredient — a reflection of Koh Samui’s history as Thailand’s coconut capital, where vast plantations once shaped both the island’s landscape and livelihood. Pandan contributes its distinctive aromatic sweetness, while jackfruit and banana reflect the abundance and simplicity of tropical island life.

“Thai desserts have a wonderful balance of fragrance, texture, and comfort,” shares Chef Fabien. “With this collection, we wanted to preserve the familiarity of those flavours while presenting them in a lighter and more refreshing way for summer.”

Each gelato is thoughtfully introduced by the culinary team, creating a service-led experience that gently shares the inspiration and local stories behind the ingredients.

Tropical Evenings at KOH Bar

The experience continues at KOH Bar with The Refreshing Taste of Tropical Evenings, a seasonal cocktail collection crafted by Bar Manager Thom Geerts.

Inspired by Thai botanicals and tropical fruits, the collection captures the relaxed rhythm of island evenings through bright and aromatic combinations of pandan, coconut, lemongrass, lime leaf, pomelo, and citrus.

Pineapple & Pandan blends pandan and coconut rum with dry sherry, pineapple juice, citrus, and soda water for a light tropical profile layered with subtle depth. Lemongrass & Lime Leaf combines lemongrass vodka with lime leaf cordial and citrus, offering a crisp and herbaceous expression of summer freshness. Thai Basil & Pomelo balances Thai basil gin with pomelo oleo and citrus, creating a cocktail that feels vibrant, fragrant, and gently bittersweet.

Served overlooking the hillside coastline as the sun begins to set, each cocktail invites guests to slow down and savour another expression of Koh Samui through flavour and aroma.

More than a seasonal menu, Destination Flavours celebrates the ingredients, traditions, and sensory moments that define summer on the island.
