Tastes of Mekong: Four Seasons Hotel Kuala Lumpur Hosts a Culinary Celebration of Vietnam, in Collaboration with Four Seasons Resort The Nam Hai

Be transported to the lively markets, quaint streets and breezy beaches of Vietnam — all without leaving the heart of Malaysia’s iconic capital. From September 14 to 24, 2023, Four Seasons Hotel Kuala Lumpur brings diners on a captivating Vietnamese journey, filled with flavours, colours and aromas to tantalize the taste buds and ignite the senses.

Hosted in the welcoming ambience of Curate, Tastes of Mekong is a special dinner collaboration between Four Seasons Hotel Kuala Lumpur and Four Seasons Resort The Nam Hai, Hoi An. The remarkable culinary experience, named after the fertile Mekong River Delta in Vietnam, celebrates the country’s rich culinary abundance and traditions.

“We are thrilled to welcome our colleagues from Vietnam for such an extraordinary dining journey. This is Vietnamese cuisine at its most authentic and immersive; a real treat for our international guests as well as gastronomes in Kuala Lumpur,” says Executive Chef Junious Dickerson.

Known for its masterful blend of delicate and complex flavours, Vietnamese cuisine is an interplay of five fundamental tastes — sweet, salty, bitter, sour and spicy. Dishes are typically light, fresh and beautifully layered, accompanied by fragrant herbs, dipping sauces and assorted condiments.

Tastes of Mekong

Leading the Tastes of Mekong adventure are Chef Nguyen Yen and Chef Nguyen Thanh Hoang from Four Seasons Resort The Nam Hai. The two Vietnamese chefs combine their talents to present an exquisite menu, featuring an intricate blend of local spices, aromatic herbs, fresh produce and succulent seafood.

From all-time favourite street foods to renowned heritage recipes, each bite reveals the delicious diversity of Vietnam. Savour the smoky sizzle of flame-cooked meats, the tangy freshness of pickled vegetables, and the creaminess of coconut milk on this marvellous sojourn through the Land of Ascending Dragon.

Begin the feast with light bites such as Bo La Lot (grilled beef wrapped in betel leaf with peanut sauce), Cha Gio Tom Hum (crispy lobster spring rolls with spicy fish sauce), Chao Tom (grilled minced prawn on sugarcane with chili sauce), and Hau Nuong (grilled oyster with Hoi An sauce and spring onions), along with a selection of vibrant and wholesome salads.

Mains include a wide variety of Vietnamese specialities such as the beloved Pho (traditional Vietnamese noodle soup with beef or chicken), Tom Hum Nuong (grilled lobster with red chili sauce), and Ca Ry Ga (chicken curry with taro and lemongrass). Also worth a special mention is Nuoc Mia, a refreshing blend of sugarcane juice and a dash of lime, available on tap.

Meet the Chefs

Hailing from Vietnam, Chef Nguyen Yen began cooking at a very young age, a chore that would later become both his passion and his profession. Along with crafting Vietnamese cuisine at Four Seasons Resort The Nam Hai, Chef Yen also leads the on-site Cooking Academy. He was one of the winners of Four Seasons Master Dish competition in 2019, and has led Vietnamese dining experiences at Four Seasons properties in Bali and Singapore.

Born to a fishing family in the coastal city of Da Nang, Chef Nguyen Thanh Hoang grew up surrounded by the bounty of the sea. An early talent for preparing fresh-off-the-boat fish and seafood eventually led him to a career in cooking. In his current role at Four Seasons Resort The Nam Hai, Chef Hoang is in charge of crafting Vietnamese, Korean and Japanese specialities.
