What to Expect at Christmas from Dani Brasserie at Four Seasons Hotel Madrid

The greatest hallmarks of Chef Dani García include his capacity to rescue gastronomy traditions while remaining faithful to his roots in Marbella, consistently raising the bar for haute cuisine. He has applied that same philosophy when designing his Christmas meal menus for Christmas Eve and New Year’s Eve, in which he reinterprets Christmas traditions to bring numerous delights to the tables at Dani Brasserie in the skies of Madrid on the seventh floor of Four Seasons Hotel Madrid.

The celebrations begin on December 24, 2024 with a tasting menu that opens with a mollusc dish that includes a selection of Galician clams in a hare jus, steamed abalone with sake and codium seaweed, house-style two-colour cauliflower caviar, sea snail au natural and Daniel Sorlut Nº 3 oyster accompanied by Ossetra caviar beurre blanc. This is followed by a Dani García classic that has been refreshed for the occasion: foie gras millefeuille with goat’s cheese and caramelised green apple. Next up is a lobster and imperial caviar consommé full of contrasts, with lobster gelée and dill sour cream. The main courses will consist of sole Wellington with spinach and Melanosporum truffle (inspired by the French matelote) followed by the exquisite roasted Challans duck à l’orange accompanied by crêpes. For those with a sweet tooth, the dessert offer begins with Lemon, Lemon (a light sponge with confit lemon mousse) and continues with a hazelnut molten cake with yoghurt cream, caramelised hazelnuts and vanilla ice cream to conclude the experience in style.

The New Year’s Eve dinner once again begins with the Dani mollusc dish followed by one of the signature dishes from his career: Tomate Nitro, a refreshed version of the classic with smoked eel, accompanied by a cold almond soup, herring eggs and angel hair. The next dish features another classic: Ossetra Imperial with green asparagus gelée and white asparagus cream, followed by roasted lobster resting on an upturned vol-au-vent and American sauce. The second main course will consist of pheasant stuffed with plums and foie gras sauce, while the sweet final touch comes in the form of a basil flan with an almond, pear and toasted pine nut crumble followed by the smoky chocolates dessert with chocolate, whisky and coffee butter ice cream.

Dani Brasserie will also be offering a children’s menu on these special occasions, as well as plant-based options. “Dani Brasserie believes that Christmas means celebrating, sharing and living magical moments surrounded by friends and family. Complete customer satisfaction is always our goal and perhaps even more so at such a special time of year,” explains Ismael Paul, head chef at the restaurant.

After enjoying the menu of one’s dreams to see off 2024 in style, those choosing to celebrate New Year’s Eve at Dani Brasserie will welcome in the New Year with the traditional 12 grapes and accompanying party to mark the start of the first festivities in 2025.

Besides its menus for these special occasions, Dani Brasserie will also be offering its guests a series of experiences to transform the winter season into a genuine advent calendar. These include a Christmas version of its Big Format experience from December 2, 2024 for enjoying select wines in large formats by the glass. Furthermore, the restaurant launched its highly anticipated brunch service on November 3, 2024.

Each experience can be enjoyed perfectly either inside the restaurant itself or on its terrace with the best views of the capital and temporary heating for these festivities. Other surprises, such as champagne and fondue, will be there to delight anyone partaking of these celebrations - a genuine après-ski in the heart of Madrid.
