Carnival in a Glass: The Essence of the New Cocktail Menu at Dani Brasserie at Four Seasons Hotel Madrid

Designed by bartenders Giuseppe Tattone and Manuel Alonso Domínguez, the new mixology menu on the seventh floor of Four Seasons Hotel Madrid is an ode to the joy and entertainment of carnivals around the world; from the colourful samba-fuelled parades of Rio de Janeiro to the enigmatic traditions of Venice

Carnivals are an ancestral tradition that have spread around the globe and embraced unique cultural characteristics wherever they go. Nonetheless, they all share the same air of celebration that keeps their spirit alive. This concept has been clearly reflected at Dani Brasserie at Four Seasons Hotel Madrid and always inspires its Head Bartender, Giuseppe Tattone. “Celebration is part of our soul, and what better way to honour that than with our new cocktail menu inspired by the vibrant carnivals of the world,” he says.

Masks began to be used during the Middle Ages for people to enjoy some temporary freedom under the guarantee of having one’s face hidden for a time. To the same end, Dani Brasserie presents its new cocktail menu on a mask full of symbolism in an effort to ensure that anyone choosing to enjoy one of its cocktails can live an uninhibited experience from somewhere around the world.

Each cocktail represents an essential stop on a journey through the best carnivals of the world, distilling the magic and essence of each one into a glass. This concept could not be more in line with the joyful identity of Giuseppe himself, of Manuel Alonso Domínguez (Assistant Head Bartender) and the rest of the team. “We took inspiration from the music, the atmosphere, the food and the typical drinks of each location to transport you straight to the Sambadrome of Rio de Janeiro, the colourful parades of Notting Hill or the evocative flower battles in Nice,” explains the Head Bartender.

The Carnival mask of Dani Brasserie offers the Arlecchino, a creation inspired by the bright and playful spirit of the enigmatic character from the Italian commedia dell'arte; the Mascarita, full of inventiveness; the Rainha, evoking the rhythm and joy to be found in the samba groups that parade through Rio de Janeiro; the J’Ouvert, representing Caribbean extravagance in every sip; the Marimonda, bringing with it the classic spirit of this character from the Barranquilla carnival in Colombia; and, finally, the Popurrí and the Banana Carré, both creations made with Barbadillo. The menu also includes two mocktails: the Raja Momo and Triboulet.

The liquid menu at Dani Brasserie perfectly suits the magic to be found at its Snack Bar, simple delights focused on the products themselves, such as the Natural Oysters, the award-winning Dani’s Club Sandwich or the Prawns “Robuchon Style.”
