Sakura Celebrations Bring Spring to Isa Restaurant & Cocktail Bar at Four Seasons Hotel Madrid

With the arrival of spring at Four Seasons Hotel Madrid, Isa Restaurant & Cocktail Bar - a benchmark for gastronomy in Madrid offering Asian street food and signature cocktails - once again pays tribute to one of the most iconic Japanese traditions: sakura, the much-anticipated cherry blossom.

Until April 19, 2026, Isa is transforming itself to celebrate this unique time of year with a special agenda that combines gastronomy, signature cocktails and Japanese culture; a wonderful tribute to the ephemeral beauty of spring and the idea of capturing a taste of something so fleeting in nature.

Through this initiative, Isa is strengthening its identity as somewhere in Madrid to enjoy unique gastronomy experiences, a place where street food-inspired contemporary Asian cuisine coexists with signature cocktails and a schedule of cultural experiences that converts each visit into something different and unrepeatable.

A Menu That Blossoms with the Season

The team at Isa has designed a special menu for the occasion. The Sakura menu (available for EUR 55  per person) takes inspiration from the seasonal colours, aromas and other characteristic subtleties.

An oyster with Sakura kakigori kicks off the experience; a delicious bite that evokes the freshness of spring. Then comes the raw cured salmon with beetroot and pickled spring onion, followed by the Kaiju Roll made with soft-shell crab, avocado rice and a cream of sakura with ceviche sauce.

The mains include the pork rib pink bao with bulgogi sauce, a visual wink to the pink colours of cherry trees in blossom, giving way to the wagyu picanha with cauliflower purée, which provides depth and character to the gastronomy experience.

The menu culminates with Sakura Tree, a dessert designed as a visual and sensorial homage to the cherry blossom. This consists of a cocoa crunch base covered with vanilla ganache and a cherry compote, accompanied by a cherry sorbet for freshness and balance. This is topped with a pink candyfloss cloud to evoke a flowering tree canopy. The entire menu seeks to reflect the culinary spirit of Isa: to reinterpret Asian street food through technique and produce.

Time-Limited Cocktails Inspired by Japan

For this three-week celebration, the experience is complemented by a special menu of four signature cocktails created by Miguel Pérez with The House of Suntory. Each item on the list interprets the sakura soul through floral aromas, fruity notes and iconic ingredients from Japanese culture.

They include: Kyoto Bloom, made with Toki whisky, Mancino Sakura vermouth, black elderflower and orange bitters; Cherry Blossom, which combines Roku gin with cherry and strawberry liqueur; Pandan Pandan, a silky cocktail with Roku gin, pandan, rice and banana; and Tokyo Hana Punch, a tropical mix with Brugal 1888 rum, banana, coconut and pineapple.

A Night Devoted to the Art of Kumiko

On April 13, 2026, Isa will host a special evening at which guests will be able to discover Kumiko, a traditional Japanese woodworking technique that consists of assembling delicate pieces of wood to form geometric patterns without using nails.

The art of Kumiko, which can also be found in the restaurant décor itself (such as the coasters and menu), will feature in a creative workshop at which guests will be able to create their own piece.

A whisky tasting with The House of Suntory will complete the experience, so guests can try several varieties from the Japanese brand and learn more about Japanese whisky culture. All this will be accompanied by a special pairing menu including such dishes as the tuna cone with truffled crème fraîche, the wagyu beef tartare panipuri with hollandaise sauce, and a sweet finale based on intense chocolate, cherry and pepper, designed to perfectly pair with each one of the whiskies.

An International Conclusion from Bologna

The sakura season will conclude on April 19, 2026 with a special event at the bar open to the public and featuring Sentaku Izakaya, one of the most interesting Japanese projects in Bologna, Italy.

The invited team will share the Isa bar for a guest shift during which a selection of cocktails created for the occasion will be revealed alongside a special dish straight from the Italian city itself. The evening has been designed to celebrate a coming together of cultures and to bid farewell to sakura season with the characteristic festive spirit of Isa.

These cocktails will include such creations as Ikigai, a combination based on Roku gin with notes of tonka beans, topinambur syrup and yuzu sake; Bakeneko, made with Brugal 1888 rum, banana syrup and parsnip, with a touch of shio koji and Japanese umami bitters; and Hachi, featuring Hibiki Harmony whisky in combination with genmaicha tea soda, kombu kelp, honey and umami bitters.

For three weeks, the restaurant will therefore become a venue where gastronomy, cocktails and Japanese culture interact to celebrate the arrival of spring, reminding us all that - just like cherry blossom - some of the most beautiful moments are also the most fleeting.
