The Dani Brasserie Roof Terrace at Four Seasons Hotel Madrid Launches Spring & Bubbles Cocktails for Spring

With the arrival of spring, the city slows its pace and becomes brighter; terraces come back to life and outdoor plans come to the fore once again. From the seventh floor of Four Seasons Hotel Madrid, Dani Brasserie welcomes the season with Spring & Bubbles to connect with Mediterranean cuisine under the Dani García seal of quality; a concept that puts enjoying a drink with friends at the heart of the experience.
Through June 21, 2026, the terrace will become a place where cocktails set the pace. The cocktails on this menu have been designed for sipping and feature several highball options: light and fizzy combinations with floral and fruity notes to wile away the longer evenings.
Spring & Bubbles is centred around highballs, a cocktail format in which a spirit base is lightened with a carbonated mixer and plenty of ice, prioritising freshness and lightness. Flowers, fruits and herbal subtleties become reminiscent of the season itself, offering a different way to enjoy a drink with friends while soaking in the skyline: long drinks, clean flavours and an experience that enhances after-meal relaxation and naturally extends the evening.
Spring & Bubbles offers a concept focused on three creations that interpret spring from different perspectives. Hanami is the first, with a delicate and floral profile inspired by the Japanese tradition of contemplating cherry trees in blossom: Roku, St-Germain, Amaro Santoni, strawberries and sakura tea in a subtle and perfumed mix. Bonnie is a little more all-encompassing: Macallan 12 in combination with Amontillado Príncipe sherry, plum, mango and lemongrass for a warm and silky highball. In turn, Issai offers something vibrant and contemporary: Hibiki Harmony, Chartreuse, yuzu, Japanese kiwi and green shiso, designed to refresh and clean the palate.
This liquid journey is accompanied by a selection of dishes that are ideal for any informal setting and perfectly suited to the pace of life on this terrace. From such iconic dishes by the headline chef as the Rossini burger (brioche bun, matured Simmental loin, foie gras and parmesan cheese) to such lighter options designed for sharing as the scarlet shrimp or Iberian ham croquettes, the guacamole with crispy tempura, the Robuchón-style prawns and the tuna descargamento. The idea is to alternate these bites and therefore prolong the experience for a relaxed and unhurried result.
Spring & Bubbles creates a connection between the terrace and the vibe of the restaurant: a flowing experience where the bar, table and roof terrace all tell the same seasonal story with views of the Madrid skyline. It’s a great spring plan for accompanying the city from on high at any time of the day: a late aperitif, long after-meal relaxation, evenings with a view and nights that beg for just one more cocktail.
