Echoing the ancestral art of storytelling that makes Marrakech world-renowned, the Resort has curated a vibrant program honouring Moroccan heritage, where local ingredients and traditions ground a culinary journey of global scope.
A Tribute to the Majhool Date: An Odyssey from the Tafilalet
Before gaining worldwide renown as the celebrated fruit of kings, the Majhool date first flourished in the palm groves of Morocco’s Tafilalet oasis. It is this specific origin story that inspires the Resort’s signature creation.
Drawing from the chronicles of 17th-century travel writer Al-Arabi Mizin, who praised the unique quality of these Tafilalet dates long before they reached international markets, Executive Pastry Chef Anouar Ait Abdelaali presents a true work of art. He celebrates the journey of this legendary fruit, which once traversed perilous caravan routes to reach the royal courts of Europe.
This Trompe-L'œil masterpiece, sculpted to mirror the original fruit, conceals a sophisticated architecture of flavours: a chocolate praline crunch provides bold texture, paired with the airiness of a whipped pistachio ganache and the subtlety of a honey glaze. Reflecting the spirit of gathering inherent to Ramadan, this creation embodies a harmonious union between the memory of an ancient terroir and the virtuosity of contemporary haute pâtisserie.
To complete the experience, the cake is presented in a custom-designed box adorned with traditional lantern motifs, evoking the spirit of Ramadan.

Iftar at Quattro Restaurant: Moroccan Roots and International Horizons
Every evening at sunset, Quattro restaurant unveils an Iftar experience where Moroccan traditions prevail, supported by international inspirations. Priced at MAD 790 per person, the buffet unfolds as a gustatory narrative orchestrated by the Resort’s Chefs.
The heart of the buffet celebrates local gastronomy with succulent Méchouis, slow-cooked tajines, Harira soups, and Ramadan essentials such as Chebbakia, Sellou, and Pastillas. This offering is complemented by thematic live stations:
- The Italian Station: Fresh pasta and authentic antipasti take centre stage.
- The Levantine Station: The presence of Chef Rachid Ouzkit enriches the experience with refined mezzes, falafels, and kunafah.
