Four Seasons Hotel Miami Introduces Edge Brasserie and Cocktail Bar
A new experience befitting the locale of the Miami dining scene
Four Seasons Hotel Miami is taking its culinary program to new heights with the introduction of Edge Brasserie and Cocktail Bar, its indoor-meets-rooftop spot above Brickell Avenue. Capturing the spirit of food in Miami and the many cultures that fabricate the city, Edge Brasserie will be known for its regional cuisine prepared simply and presented socially for a contemporary culinary journey. Side-by-side, the Cocktail Bar’s seasonal approach respects timeless recipes while bringing originality to the forefront.
Formerly known as Edge Steak & Bar, a Brickell steakhouse staple, Edge Brasserie and Cocktail Bar expands its offerings through creative freedom in conceptualizing and composing dishes. While farm-fresh Butchers Cuts have a place on the menu, Executive Chef Aaron Brooks has created an innovative menu that harmonizes seasonal elements, playing on his Australian roots and artful craft. Guests will notice a bevy of seafood and vegetarian options prepared and sourced with ingredients from local farms, butchers, and fisheries. New Raw Bar features and Starters include Dressed Oysters Prepared Two Ways; Tuna Crudo with Nikkei Sauce, Avocado, and Crispy Quinoa; and Hokkaido Scallop Risotto with Spring Peas, Pickled Pepper, and Salsa Verde. Signatures such as a new Grilled Rohan Duck with Maduro Glaze, Caribbean Curry, Spring Onions, and Coconut Rice; Charred Cauliflower with Red Adobo, Farro, Pomegranate, and Shallot Vinaigrette; and a Whole Roasted Branzino presented tableside with Tomato and Garlic Escabeche also channel a global sensibility.
Before dinner or after, guests will want to visit the Cocktail Bar. With a focus on progressive style and seasonality, the bar menu presents three types of cocktails: Signature Seasonal Cocktails such as One Time at Summer Camp with Amaras Mezcal, Reposado Tequila, Cointreau, Watermelon, Lime, Agave, and Worm Salt Rim; Classic Cocktail Twists including the 007.5 with Citrus-infused Tito’s Vodka, No.3 Gin, Lillet Blanc, Italicus, and Orange Bitters; and Tea Based Cocktails with lower ABV offerings such as Twas Nice with Lillet, Fino Sherry, Earl Grey Lavender Syrup, and Lemon.
Edge Brasserie and Cocktail Bar also feels like a new place to gather and entertain within a restyled setting and atmosphere. The fresh menu and decor enhancements introduce layers of both flavours and textures for a refined yet relaxed brasserie style experience.
