Auro at Four Seasons Resort and Residences Napa Valley earned its Michelin star eight months after opening and has held it for four consecutive years, the most recent under Executive Chef Evan Neumann, appointed April 2026. It remains Calistoga's only Michelin-starred dining room.
Under Neumann, the restaurant enters its next chapter with a sharpened focus on Napa Valley terroir and an ingredient-first approach. The weekly-changing seven-course tasting menu presents contemporary California cuisine rooted in classical French technique, with influences drawn from Japan, and ingredients gathered from Napa Valley's vineyards and farms and the Northern California coast. The dining room overlooks Calistoga's acclaimed vineyards and the Palisades Mountains, and the cellar behind it holds Wine Spectator's Best of Award of Excellence, 2023 through 2026.
The kitchen operates on a culture of mentorship and discipline, standards built to outlast any single season or menu. Auro is defined by a simple conviction: great cuisine is inseparable from the team that creates it.
Cuisine
The seven-course tasting menu changes seasonally, driven by what the season yields and how precisely it can be handled. Neumann's cooking is rooted in classical French technique, refined across Michelin-starred kitchens in France, Monaco and New York, and informed by the flavours of Japan. His signatures are sauce work, vegetable-forward preparations, dry-ageing and an exacting sense of aromatic balance.
Courses are built around hyper-seasonal ingredients from Napa Valley farms and producers, alongside seafood from Pacific waters. Neumann's palate returns again and again to the marine and the floral: razor clams with sea bean and fennel, Hokkaido scallop under a chamomile and Japanese curry sabayon, kinmedai brightened with brown butter ponzu, a dry-aged wagyu course finished with Tenbrink Farms squash blossom. Each evening begins with a series of amuse-bouches and house-made bread service before progressing through seven courses. Menus form in conversation with growers, often planned around what is about to be harvested rather than what has arrived. Neumann calls the approach ingredient truth: the product leads, and technique serves clarity rather than complexity.
Beverage
The wine program is overseen by Resort Beverage Manager Derek Stevenson, a 2026 James Beard Award semifinalist for Outstanding Professional in Beverage Service. The cellar holds more than 4,400 bottles across 750-plus labels, anchored in Napa Valley producers with depth across benchmark Old World and cult New World wines.
Dedicated collections include a comprehensive Chris Carpenter selection featuring Lokoya from all four mountain appellations, Cardinale, La Jota Vineyard Co. and Mt. Brave. The cellar also holds significant depth in Hundred Acre, with library vintages reaching back to Kayli Morgan 2003, and one of Napa Valley's most complete Sine Qua Non offerings. Old World holdings include Petrus, Domaine de la Romanée-Conti, Château Latour and Château Haut-Brion.
A wine pairing designed to mirror the philosophy and progression of each evening's courses accompanies the tasting menu.
Design
Auro sits within Four Seasons Resort and Residences Napa Valley, tucked behind the communal living room of TRUSS Restaurant + Bar. Warm gray textured walls and oak floors ground the room in a quiet, natural palette. Floor-to-ceiling windows frame the culinary team at work, while warmly lit booth seating opens onto a semi-private terrace facing the Resort's vineyards and the Palisades Mountains. Couple of tables sit within the kitchen itself, placing guests at the centre of the evening's unfolding culinary craft.

- Wine Dinner Series - From May through October, Auro hosts a seasonal series pairing a six-course menu by Executive Chef Evan Neumann with selections from leading Napa Valley producers. Each dinner is composed to complement the character of the featured winery, drawing on the same terroir-driven philosophy that defines the nightly menu.
