A Four Seasons veteran of more than 20 years, Australia-native Dario Montelvere began his career at Four Seasons Hotel Sydney, starting as a steward and rising to Banquet Chef under the mentorship of Serge Dansreau, a pioneer of modern cuisine in Sydney. During his time there, he helped coordinate dinners with renowned chefs such as Tetsuya Wakuda, Neil Perry, and Justin North. He then moved to Four Seasons Hotel Toronto, where he worked alongside celebrity Chef Lynn Crawford during her Iron Chef America appearances and filming at the hotel. Dario gained significant experience managing a large banquet operation and had the honour of cooking for Four Seasons Founder Isadore Sharp and his family.
At Four Seasons Resort Lanai, Dario served as the Restaurant Chef for Kailani, an Italian restaurant, making television appearances and collaborating with Maui Brewing Company and Koloa Rum Distillery. Later, at Four Seasons Resort Peninsula Papagayo, he opened a new Italian restaurant called Cena Sociale, which led to an invitation to cook at the prestigious James Beard House in New York City.
In his spare time, Dario enjoys travelling with his wife Sylvia, engaging in basketball, and collecting LEGO sets. His travels also allow him to explore new cuisines and experience different cultures through food, deepening his appreciation for the diverse flavours and traditions that inspire his culinary creations.
