Chef Glen Forman began his culinary journey with a humble start in his UCLA dorm, where he cooked for friends and experimented with flavors. After leaving LA, he moved to Boston and honed his skills in Cambridge, focusing initially on pizza and steaks before expanding his culinary repertoire. A brief detour into commercial photography in Minneapolis did not dampen his passion, and he soon returned to the kitchen, training under four James Beard Award-winning chefs, which ignited his true passion for cooking.

Chef Glen's career continued to flourish as he joined Young Joni, a restaurant known for its Korean and wood-fired focus. His connection with New Orleans began in 2000 during Jazz Fest, where he saw Fats Domino perform, and it has remained a cherished part of his life. He honeymooned in the city and later brought his daughter to experience its vibrant culture.

Chef Glen's professional journey led him to roles such as sous chef at Saba and Chef de Cuisine at Josephine Estelle, before reconnecting with Partner Chef Alon Shaya to join the Miss River team. When not in the kitchen, he enjoys live music and traveling with his family. Reflecting on his career, Chef Glen says, "My favorite part of my job is the opportunity to learn and teach. The endless possibilities in cooking and styles fascinate me and keep me inspired."
