Originally from Massachusetts, William Panaretos first imagined a life behind the stove, training in classical culinary arts before discovering his passion for orchestrating the bigger picture of food and beverage service. After graduating from the Culinary Institute of America and later earning an MBA, he joined Four Seasons in Palm Beach in 2005 as an Assistant Food and Beverage Manager.

From there, William built a rich career shaped by both global and resort experiences. At Four Seasons Hualalai, he expanded his skills across recreation, in-room dining, and food and beverage leadership before moving on to Hong Kong, where he helped oversee operations at one of the brand’s busiest international properties. In Houston, he served as Director of Food and Beverage, and later in Punta Mita, he partnered with acclaimed chef Richard Sandoval to launch Dos Catrinas, a vibrant dining destination. Most recently, as Resort Manager at Four Seasons Vail, William collaborated with Frasca Hospitality Group to re-concept Tavernetta, reinforcing his reputation for innovation, collaboration, and a sharp eye for detail.

A self-professed food and beverage aficionado, William has led multiple restaurant renovations, re-brandings, and openings. He has a natural talent for menu engineering, driving profitability, and streamlining operations; yet, one of his greatest gifts lies in his ability to mentor teams and infuse service culture with humour, warmth, and inclusion.

Now stepping into his role as Hotel Manager in New Orleans, William is excited to immerse himself in the Crescent City’s legendary food and music culture. “New Orleans is a city that lives and breathes hospitality,” he says. “To bring Four Seasons standards to such a vibrant place, while also learning from its traditions, is an incredible opportunity.”

When not at the hotel, William enjoys experimenting in the kitchen, often recreating classic Greek dishes or debating wine versus bourbon (with bourbon nearly always winning). He also loves exploring new destinations, the great outdoors, and quiet moments with a latte in hand. Above all, William believes that laughter and shared stories are the true markers of hospitality, just as important as the meals and moments themselves.
