A Celebration of Piemonte, Italy Returns to Four Seasons Resort Orlando

Experience a decadent dinner with renowned Italian chefs in celebration of the famed white Alba truffle

In one month, Executive Chef Fabrizio Schenardi will welcome Italian guest chefs in partnership with the Italian Food Style Education (IFSE) Culinary School to Ravello at Four Seasons Resort Orlando at Walt Disney World Resort, to present a special dinner experience highlighting the Piemonte region of Italy. The star of the show will be the white Alba truffle, grown in Piemonte, a delicacy available for a limited time.

In addition to Schenardi, presenting the special dinner on December 8, 2023 will be talented Italian chefs of Michelin-starred restaurants and educators from IFSE Culinary School, including Raffaelle Trovato, founder and director of IFSE. In April 2015, Schenardi was presented with the Paolo Bertani Award for his Italian culinary achievements by the Italian Academy of Cuisine and IFSE. The culinarians last visited Ravello for a special event in December 2022.

“I look forward to welcoming the IFSE professionals back to Ravello and for Resort guests and local residents to take part in this authentic Italian experience,” says Schenardi.  “The white truffle is a true delicacy offered for a brief season, and it is meant to be celebrated with exceptional Italian cuisine. We are excited to bring our guests this one-of-a-kind truffle experience - the culinary highlight of the year for Ravello.”

The event will feature guest chef Ivan Onorato, corporate chef at Credenza Group. Born in Torino, Italy, Onorato began cooking at the age of 15, at the Davide Oldani restaurant, rated 1 Michelin star, in Milan, Italy. His experience includes working for the 3 Michelin star restaurant Chateau Les Crayeres in Reims, France as well as with well-known chefs Gordon Ramsay and Alain Ducasse. In 2008, Onorato joined Giovanni Grasso and Igor Macchia at La Credenza. Serving the past 15 years with Credenza Group, Oronato also serves as a worldwide culinary consultant.

The decadent white truffle menu to be featured on December 8, 2023 at 6:00 pm is as follows:

First Course

  • Capesanta Nocciola e Mela Verde, Tartufo Bianco - Sea Scallops, Hazelnuts, Green Apple, White Truffle

Second Course

  • Rosa Bianca di Baccalà Mantecato, Tartufo Bianco - White Rose, Creamed Cod, White Truffle

Third Course

  • Risotto al Formaggino “Ricordi d’Oro”, Tartufo Bianco - “Golden Memory” Piedmont Cheese Risotto, White Truffle

Fourth Course

  • Ovetto Morbido, Vongole, Burro Bianco, Tartufo Bianco - Clams, Soft Egg, Beurre Blanc, White Truffle

Fifth Course

  • Pancetta di Maiale, Parmantier e Zafferano - Pork Belly, Potato Parmantier, Saffron, White Truffle

Dessert

  • Torta al Formaggio, Composta di Zucca, Gelato All’olio di Oliva, Tartufo Bianco - Cheesecake, Pumpkin Compote, Olive Oil Gelato, White Truffle

This dinner is USD 290 per person, plus tax and gratuity.
