San Domenico Palace, Taormina, A Four Seasons Hotel, and Sicily kick off the 2025 season with an international twist, reaffirming their place as one of Italy’s most sought-after destinations.

To celebrate the third season of The White Lotus, available on Sky and NOW in Italy, the hotel unveils its new The White Lotus Bar, set in the enchanting Bar & Chiostro of the former monastery, featuring a themed cocktail menu.

Following the first season in Maui and the second in Taormina, this collaboration opens the doors to one of the city’s most iconic locations - made famous among set-jetting enthusiasts thanks to the show’s second season, which was mainly filmed here.

The main highlight of the season is the culinary soul that has brought the authenticity of Italian and Sicilian cuisine to this prestigious hospitality destination. At the forefront is Chef Massimo Mantarro, who promises to surprise once again at the hotel's gourmet restaurant, Principe Cerami, proudly holding one Michelin star.

This year Chef Mantarro welcomes guests to the stunning terrace during the summer season, surrounded by the breathtaking backdrop of Mount Etna and Taormina Bay, for an unforgettable dinner experience. He has chosen to give guests the freedom to create their own culinary journey to savour the essence of Sicily.

The new menu allows guests to select their courses from a wide variety of textures and flavours. Moreover, to enhance the use of the freshest ingredients and enable his brigade to continuously evolve, Chef Mantarro has decided to change the dishes every 10 days.

"The idea of changing the menu dishes more frequently is driven by the strong desire to offer guests ingredients in constant evolution, as well as the great aspiration to work closely with the brigade - stimulating their training, creativity, and talent remains a priority in crafting a unique experience," says Chef Massimo Mantarro.

This is a choice that aligns with the emphasis on the local provenance of the products, which Mantarro invites guests to discover through a real map found in the menu, guiding them to explore the origin of the ingredients themselves. The authentic local experience and the respect for Sicilian culture, the rhythms of nature, and every element are encapsulated in the strong identity of the dishes.

The new menu is a journey back to the essentials, the core principle of the Chef, a true tribute to Sicily, a generous land in aromas, colours, and landscapes that invites exploration of eclectic flavours. In addition to the most representative creations, such as Come un quadro di Arcimboldo and Monte Etna, the menu now features dishes such as Branzino, seabass with artichokes in different textures; Maialino nero piglet, turnip tops and seasonal stone fruit; Quaglia, quail, red cabbage, savoy cabbage and peanuts; and Plin, traditional Italian dumpling pasta, sausages, red prawns, chard.

Each dish is always prepared with respect and care for the ingredients, using the Winnow technology to monitor food waste.

Both a master in the kitchen and a welcoming host, Chef Mantarro is set to welcome an internationally renowned culinary figure to his exclusive kitchen this spring. On April 15, 2025, Mantarro and Rodolfo Lavrador, Executive Chef of CURA Restaurant at Four Seasons Hotel Ritz Lisbon, will present an exceptional premiere in a four-hand dinner open to external guests.

To welcome even more guests and travellers, both at the table and beyond, this year a new restaurant opens at the San Domenico Palace, Taormina, A Four Seasons Hotel. Starting in March, Rosso Restaurant reopens, offering a culinary journey through the most authentic Mediterranean Italian cuisine. The dishes celebrate the rich seasonal ingredients of summer in the Mediterranean, showcased in Sala Liberty of the Hotel.

This new venue complements Anciovi, the hotel’s poolside restaurant, which serves seafood specialties paired with typical Sicilian dishes - in a vibrant and lively atmosphere, perfect for guests seeking the ambiance of a pool club.
