Available from January 1 to February 28, 2025, this afternoon tea spotlights Japan’s winter strawberries, famed for their vibrant sweetness and exceptional freshness.
Set against the backdrop of Tokyo’s iconic skyline and bathed in warm sunlight, the high tea begins with a sparkling toast. The enchanting Strawberry welcome drink blends the richness of perfectly ripe strawberries with the delicate aromas of elderflower, German chamomile, and fresh herbs, evoking the serenity of a flower-filled garden.
At the heart of this experience are five stunning strawberry desserts, each a masterpiece of artistry crafted by Executive Pastry Chef Patrick Thibaud. With their colourful presentation and delicious flavours, these creations promise to delight both the palate and the eyes.
Among them, the chef’s standout recommendation is the Almond Milk and Strawberry Jelly Verrine. Layers of silky almond milk and jewel-toned strawberries offer a fun harmony of textures and flavours, showcasing the strawberries in their peak-season glory with each spoonful.
Menu Highlights
Shaped around the classic pairing of chocolate and strawberry, the menu introduces sweet creations such as the Strawberry Tart, its crisp base brimming with whipped vanilla chocolate ganache and fresh strawberries, and the Dark Chocolate & Strawberry Choux, a layered composition of chocolate shortbread, strawberry cream and jam topped with dark chocolate cream.
The Strawberry, Orange & Cardamom Cake combines nutty almond biscuit, zesty orange jelly and rich cardamom cream, all wrapped in smooth strawberry-flavoured chocolate, while the White Chocolate & Strawberry Mousse surprises the palate with tangy lime notes and a burst of strawberry compote at the centre.
Executive Chef Daniel Calvert’s savoury menu unfolds elevated bites such as Wagyu Empanada, Crab Tart and an array of dainty Tea Sandwiches.
