Copenhagen’s Two-Michelin-Starred Koan Joins Est at Four Seasons Hotel Tokyo at Otemachi




This October, Tokyo’s culinary stage will welcome one of Europe’s most intriguing voices. Chef Kristian Baumann, of Copenhagen’s Koan (two Michelin stars), will present a three-night residency at est, the Michelin-starred French restaurant at Four Seasons Hotel Tokyo at Otemachi. From October 29 to 31, 2025, guests are invited into a dialogue between cultures expressed through an 8-course tasting menu with beverage pairings.
A Story of Memory and Place
Adopted from South Korea and raised in Denmark, Baumann has forged a cuisine defined by identity, memory and terroir. At Koan, he has created a platform where ancestral flavours meet Danish precision, earning acclaim across Europe. His Japan debut carries a sense of homecoming, as many of his inspirations have long been rooted in Japanese produce and hospitality.
The est residency begins with delicate opening compositions crafted by Chef de Cuisine Guillaume Bracaval and the Koan team, before flowing into Koan highlights such as:
- Hokkaido scallop with omija berry and sweet potato
- Lightly poached clams with champagne and gamtae
- Roasted seaweed ice cream with hazelnut oil and caviar
The evening will close with an original dessert by Pastry Chef Michele Abbatemarco, a final note linking Tokyo and Copenhagen.
Pairings from Koan’s Cellar
Beverages curated by Koan’s Head Sommelier and General Manager, Lasse Peder Nielsen, will accompany each course. Expect Loire Valley whites and unexpected cocktails – including Koan’s signatures – designed to echo the tempo of Baumann’s cooking.
