Steadfire Modern Chophouse Debuts This July at Four Seasons Resort and Residences Jackson Hole

Four Seasons Resort and Residences Jackson Hole announces the July 2025 opening of Steadfire Chophouse, a bold new all-day dining concept bringing the heart and heritage of the American West to the table in a modern mountain setting. With a focus on flame-cooked cuisine and locally sourced ingredients, Steadfire promises a dynamic culinary experience as authentic as its Wyoming roots.

“We’re proud to honour Wyoming’s ranching heritage through the Steadfire menu and our partnerships with top local ranches,” says Executive Chef Michael Goralski. “Diners can expect a menu that’s both elevated and deeply rooted in place, reflecting the rugged beauty and culinary richness of Jackson Hole.”

The 122-seat, 3,456-square-foot (321 square metre) restaurant reimagines the traditional chophouse through a contemporary lens—honouring the region’s frontier spirit while incorporating modern design. A private dining area for 10 offers an intimate setting in the heart of the restaurant, with an additional semi-private area offers diverse seating for a variety of special events and parties. Defining the space is a rich tapestry of textures and colours, blending richly veined wood and distressed leather with contemporary tones and textures.

Menu Preview

At the heart of the Steadfire offerings are heritage chops and prime cuts, seared over open flame—from the 40 ounce Wagyu Porterhouse to a bone-in bison New York strip and Colorado elk chop. A dry age locker takes centre stage, finishing cuts onsite. Meats are primarily sourced from three regional ranches – 22 Wagyu, Reminisce and Snake River Farms – ensuring the peak of freshness and taste. Sauces such as Huckleberry Steak Sauce and Juniper Bearnaise, plus decadent garnishes including Truffle Wagyu Butter and Bone Marrow Herb Crust, elevate every cut. A tableside trolley presents Wagyu prepared to order, for a decadent mid-course or indulgent main entrée.

Steadfire’s desserts offer a refined take on fireside favourites, blending housemade elements with Western flavours under the talented direction of Executive Pastry Chef Rhonda Ashton. Highlights include Signature S’mores with handcrafted graham crackers, vanilla marshmallows, and three Valrhona chocolates and an Olive Oil Cake with skyr yogurt cream, huckleberry compote, and gin and sumac sherbet.

Wine Program

Steadfire’s wine list is a tribute to bold terroir and refined craftsmanship, echoing the restaurant’s reverence for fire-forged cuisine. Curated by Sommelier AJ Puccia, the cellar is deep, dynamic, and deliberately composed, from Grand Cru Champagnes and rare Burgundies to expressive New World blends. Standout selections from the West Coast—including Pinot Noir from the Sonoma Coast, Napa Valley Chardonnay, and Santa Barbara Syrah celebrating the heights of American winemaking.

Cocktail and Zero-Proof Menu

Steadfire’s cocktail menu is a tribute to the American West—rooted in storytelling and overseen by Resort Mixologist Nicholas Gatz. Each drink channels the spirit of frontier legends through smoked elements, foraged botanicals, regional spirits and historical nods. Highlights include the Trapper’s Pay Old Fashioned, featuring bison tallow-washed bourbon, maple, and chocolate bitters, finished with candied bacon. A robust selection of zero-proof options complements the cocktail menu, with thoughtfully presented options such as the Juniper and Spruce Tonic, an alpine refresher that evokes a hike through the evergreens. The Golden Meadow is a delicate blend of yarrow and oolong, crafted to awaken the palate.
