Embark on a delectable journey across Italy with PIGNETO’s new menu series, Autostrada del Gusto, offering a highway of flavours across the country. Each month, Chef Yoshihiro Kigawa unveils a new regional menu, highlighting local specialties from iconic cities to off-the-beaten-path towns. In January, savour northern favourites from Bolzano, Verona and Bologna, including Bolzano Pie, Apple and Walnut Salad and Wild Game mains. February brings winter classics from the northwest, such as Cabbage Gratin with Salsiccia, featuring authentic Fontina cheese from the Aosta Valley.

Share an elevated epicurean celebration at est with Chef Guillaume Bracaval’s seasonal course menu, highlighting an abundance of black truffles. Sample locally rooted creations such as the Kumano Beef Tenderloin, sourced from Wakayama Prefecture, crowned with Chef’s homemade yuzu kosho and pickled winter turnips, as well as the Tofu Cheese handcrafted with select domestic soy milk — all adorned with fresh shavings of black truffle. Conclude the exquisite meal with Chef Michele Abbatemarco’s latest creation: a symphony of strawberry mousse, apricot meringue, vanilla Chantilly, bamboo charcoal and tonka bean mousse, delicately accented with a touch of sharp pink pepper.
